Good morning! I was up early this morning. I love it when I wake up early, I usually don't have all that easy of a time getting up. Anyway, I had been up for about an hour when I looked out my window and saw this...
It reminded me of the quote "May you have just enough clouds to make a beautiful sunset". (Something like that) I think that applies to sunrises too.
Love it! I love the changing seasons, although everyone takes an adjustment. I love that it's different, and I love Fall. It is most beautiful and enjoyable. Oh, and did I mention it is peach season? Yum!
I think I will make "Pam's Peach Dessert" today. I'll definately share that recipe. Yummy, yummy! Oh, just in case you were wondering, last night's "Left over Chicken Pie" recipe was a bust. I thought it was ok, but the rest of the fam just kind of tolerated it. Oh, except Bevan, he loved it, but he's kind of like Mikey, he loves everything!
Pam's Peach Dessert
25 each vanilla creme cookies and vanilla wafers crushed (Can use just vanilla wafer- just use extra)
mix with 1 square butter
Pat into 9x13 pan
Mix:
2 - 8oz cream cheese softened
1 cup powdered sugar
2 cup cool whip
Spread over crust
Bring to a boil:
1/2 cup O.J. concentrate (from can)
2 cups water
1 cup sugar
1 Tbl cornstarch (I actually used almost 2 TBL)
Stir until thick then add: (it took me a LONG time to get it thick)
1/2 tsp. almond extract
1/2 tsp. vanilla extract
Cool
Mix sauce with 6 cups sliced peaches and put on top of cream cheese. Chill for 3 hours.
Try it, you'll love it. Oh, I got this recipe from Alesa who got it from Pam from her ward.
Well, I'm off to deliver the kiddos. Make it a great one!
